¼ cup granulated sugar
2 tablespoons corn starch
White Chocolate Rum Ganache
2 ¾ cups (16 ounces) white chocolate, chopped
1 cup (8 ounces) heavy cream
¾ teaspoon rum extract
Milk chocolate Ganache
¾ cup + 2 tablespoons (5 ounces) milk chocolate, chopped
¼ cup + 2 tablespoons (3 ounces) heavy cream
Coconut Jelly
5 cups cold water
2 1/4 cups granulated sugar
26 sheets gelatin (platinum)
2 ¼ t coconut extract
Blue and green gel food color
Microwave sponge cake
1 egg
1 tablespoon sugar
1 ½ tablespoons honey
Gel food color (leaf green, brown, lemon yellow)
3 tablespoons flour
1 ¼ teaspoons baking powder
