THE THINGS YOU'LL NEED:

Carrot Sugar Cookie

-1 cup, 2 sticks, unsalted butter (room temperature)

-1/2 cup sugar

-1/2 brown sugar

-1/2 teaspoon salt

-1 large egg

-2 medium carrots (1/4 cup grated)

-1 teaspoon vanilla extract

-1/2 teaspoon nutmeg

-1 teaspoon cinnamon powder

-3 1/2 cups all-purpose flour

Cream Cheese Royal Icing

-4 cups powdered sugar, sifted

-3 tablespoons meringue powder

-5-6 tablespoons warm water

-1 teaspoon cream cheese flavored extract

-Pinch of salt

-Food coloring: Lime green, olive, light brown, dark brown, red, rose pink, orange, black and white.
